Vietnamese Briased Pork
Wondering what’s this? This is actually a Vietnamese version of braised pork. I saw this dish on Food Safari on Discovery Travel & Living channel the other day and thought that it is pretty interesting. If I remembered correctly, I was on a roll cooking braised pork last year so I thought it would be nice to revive it once again.
Since the start of this mini project, I have managed to attempt few different versions of braised pork, from local style to Taiwanese and Japanese, and each recipe has quite a different character. It is really interesting to see how different Asian cultures cook a similar dish so differently. This Vietnamese version uses fish sauce and coconut juice, which I thought is a rather interesting combination to balance the saltiness and sweetness of the dish. The braised pork turned out pretty well. Of course, whenever I cooked braised pork, the biggest benefactor and also my most critical judge is my braised pork loving grandma. As long as she polished off her bowl of rice, I would reckon it a success.
