
My Nasi Lemak
A while back I got some very good sambal ikan bilis chilli sauce so I thought I could make some nasi lemak at home for a change. Nasi lemak is sentimental dish because it was what a group of us used to make when we were students back in Honolulu.
We used to get together on weekends because we missed hometown comfort food like chicken rice and nasi lemak so much and have a great party together. Those days were some of the most fun indeed.
Pungol Nasi Lemak is definitely the best place in Singapore to enjoy a good plate of NL. Their sunny side up were perfect, their rice was grainy with a light coconut fragrance. So of course whenever I had the urge for NL, PNL is what comes to mind.
The nasi lemak however I did was simple with baked chicken wings (no fried), onion omelette, muar otah and french beans but it satifies me beyond my mere hunger.
My recipe for my NL:
- 2 cups long grain rice
- 2.5 cups water
- 12 teaspoon of coconut cream
- 1 teaspoon of sugar
- 1/2 teaspoon of salt
