Burdock fries with snow salt

During my last trip to Japan, I was given snow salt by a salt producer in Japan.  I was rather facinated by the nature of this salt, I’ve known rock salt, pink salt, rose salt, sea salt that used in medicinal, beauty and cooking but snow salt was new to me.  Its crisp white and extremely fine, powder-like nature is almost comfortable to hold and rub between your fingers. Rather interesting sensation and this is salt?

But don’t like its physical nature fool you, this salt got punch!  A dash of it will almost instantly disappear on your lips and when used to season my burdock fries, it was like an reunion of 2 long-lost friends.  The crispy burdock pairs extremely well with the snowy white salt with packed a quick but short-lived punch of saltiness.

Burdock is used extensively in traditional Chinese medicine and this is definitely one of the healthiest way to snack my afternoon away with a hot cup of freshly brewed green tea.
